Simple Chicken Recipe in Tomato Sauce

This chicken recipe is a favorite dish of every Filipino aside from adobo. Moreover, my kids love this and I cook this for them almost every week. 

I usually do with that I could muster in the kitchen at the time of preparing dinner. Much as I want to plan a meal, I still find that I lack the time for it.

One that I need to get my head into before heading to the market. So here is my version of a simple chicken recipe in tomato sauce.

Yields 3-4 Servings

Ingredients: 

500 grams chicken cut in half (can be breast, thighs or legs)

2 medium potatoes

1 medium carrot

1 bell pepper (red/green)

3 cloves garlic minced

1 small onion sliced

1/4 cup Del Monte ketchup

1/2 cup Del Monte Tomato Sauce

1 medium tomato sliced

salt to taste

Magic Sarap all in one seasoning

1 tsp Silver Swan vinegar

1 tbsp Silver Swan Soy Sauce

2-3 tbsp cooking oil

Directions: 

  1.  Heat 2-3 tbsp cooking oil in your pan. Once heated, saute carrots and potatoes until brown. Set aside.
  2.  Saute garlic until golden brown. Put in the onion, tomato and bell pepper for about 10 seconds.
  3. Pour in the chicken with the soy sauce and vinegar.  
  4. Add about half of the Magic Sarap all in one seasoning and a bit of salt. 
  5. Stir occasionally until the chicken turns golden brown. Pour in the potatoes and carrots.
  6. Once everything is tender, pour in the ketchup and tomato sauce. You can also add a bit of water depending on how thick you want the sauce to be.
  7. Let it boil for another 3 minutes and stir occasionally. Once the sauce thickens, turn off the heat and you’re done.
