This chicken recipe is a favorite dish of every Filipino aside from adobo. Moreover, my kids love this and I cook this for them almost every week.
I usually do with that I could muster in the kitchen at the time of preparing dinner. Much as I want to plan a meal, I still find that I lack the time for it.
One that I need to get my head into before heading to the market. So here is my version of a simple chicken recipe in tomato sauce.
Yields 3-4 Servings
Ingredients:
500 grams chicken cut in half (can be breast, thighs or legs)
2 medium potatoes
1 medium carrot
1 bell pepper (red/green)
3 cloves garlic minced
1 small onion sliced
1/4 cup Del Monte ketchup
1/2 cup Del Monte Tomato Sauce
1 medium tomato sliced
salt to taste
Magic Sarap all in one seasoning
1 tsp Silver Swan vinegar
1 tbsp Silver Swan Soy Sauce
2-3 tbsp cooking oil
Directions:
- Heat 2-3 tbsp cooking oil in your pan. Once heated, saute carrots and potatoes until brown. Set aside.
- Saute garlic until golden brown. Put in the onion, tomato and bell pepper for about 10 seconds.
- Pour in the chicken with the soy sauce and vinegar.
- Add about half of the Magic Sarap all in one seasoning and a bit of salt.
- Stir occasionally until the chicken turns golden brown. Pour in the potatoes and carrots.
- Once everything is tender, pour in the ketchup and tomato sauce. You can also add a bit of water depending on how thick you want the sauce to be.
- Let it boil for another 3 minutes and stir occasionally. Once the sauce thickens, turn off the heat and you’re done.
